I absolutely love cucumbers in salads, as a snack by itself, and in my drinks! After recently exploring popsicle recipes for work, I knew I wanted to try a non-yogurt based treat without any added sugar. When I researched that organic agave nectar would do the trick, I knew I had a healthy recipe at my finger tips.
Cucumbers are in full swing in at Bloomsbury Farms, where I get my bi-weekly CSA share. The cucumbers range in size and shape; so much more fun than grocery stores packed with "perfect" looking produce that is far from perfect. What I also love about my CSA is Lauren always sneaks in some fresh herbs. The basil with a touch of lime makes these popsicles the perfect cool-down summer treat.
2 large cucumbers
1 lime, juiced
2 tbsp fresh basil leaves
1/4 cup organic agave nectar
3 cups water
METHOD: MAKES 6-7
Thinly slice 1 cucumber, lengthwise and set aside. Using a vegetable peeler, remove the skin off the other cucumber. Toss in a blender or food processor with the lime juice, basil, agave nectar and water. Blend until all ingredients are smooth.
Pour into popsicle molds or use yogurt containers (as shown here). Wrap 2 thinly sliced cucumbers around the edge of the mold. Insert stick and freeze overnight. Enjoy!
