Citrus & Avocado Salad with "Green Bean Delivery" company

PlatedColor.com Green Bean Blog Post13Remembering food comes from a farm first is important. Muddy & blurred lines with mass production have complicated that over the years and certainly impacts the misconceptions of how most of us eat today. Overwhelming gratitude for my local farmers and eating seasonally is what makes my heart beat a little bit faster.  But life forces its way in. Traveling. Working way too much. Not saying no to meetings in my schedule. All of a sudden, my fresh produce suffers, as does my weekly meal prep. When Green Bean Delivery was introduced to me, it felt like the perfect solution to those busy “life” weeks. Green Bean Delivery is a company that sources organic produce from farms straight to your door step, every week (bi-weekly or once a month) in a fun, green bin. This dynamic food company takes a multifaceted approach to building local food systems in an affordable, accessible, and CONVENIENT way. Once you become a member, you basically grocery shop online for fresh produce…adding specific items and quantities to your "bin." This is super helpful for a busy lifestyle!!! And, as a designer, the user interface of this shopping experience is very design friendly (a huge bonus!)

I came home to my green bin on Wednesday after work right at my front door. I was impressed by how each item was wrapped in either a plastic or a brown paper bag. (Removed prior to this picture). The food was kept cold & secure with their freezer pack thing. A spider did greet me with a hello, his presence reminded me: food comes from a farm!!!

This bin showcases their smallest size for $35.00. I customized this bin by picking each individual item and quantity.  You can also choose a produce "bin" to "subscribe" to. Meaning, a bin type determines what Green Bean pre-fills your order with, which you can then adjust to your liking.

PlatedColor.com Green Bean Blog Post4 I ordered lots of fruit & an avocado because I’ve been craving a citrus salad. Packed to the brim with ingredients, my salads are usually made up of 10+ ingredients. But avocado and grapefruit go a long way as a simple pairing. This salad is one of my favorites and couldn’t be more perfect as we continue to transition into spring--summer temperatures in Nashville.. Cut up half of a grapefruit & half of an avocado over a bed of light mixed greens. Toss with almonds and my Grapefruit Champagne Vinaigrette. Serves 2.

GRAPEFRUIT CHAMPAGNE VINAIGRETTE: +  1/2 Grapefruit, juiced +  1/4 Champagne Vinegar +  1/4 Leek, finely diced (or shallot or minced onion) +  Dash of Dijon mustard +  1/2 teaspoon unrefined coconut sugar +  Salt (shown here with pink sea salt) +  Pepper, freshly cracked +  1/2 Olive oil

Combine all ingredients in a mason jar and shake to produce emulsification.
