Recipes are the one thing that can bring multiple generations together. It’s the taste connection that transcends time and era. It’s my grandmother’s birthday today. I call her Gram. I fell in love with vegetables while picking green beans in her Maryland garden when I was 3 years old.
Gram loves deeply, gives endless encouragement, is hilarious and witty, serves selflessly, beat cancer last year, and fears the Lord. In celebration of her, I’m sharing her Cucumber & Tomato salad, a recipe her mother made all the time.
When I asked Gram to contribute a recipe to Plated Color, she thought this one would be healthy and easy. I couldn’t agree more. And now I know where I get my love of red onions from!
I find the joy of cooking is not in measuring and following exact instructions. To share this special recipe with you, Gram took the time to figure out how her mother and her have been making it all these years with out a recipe & exact measurements. I love that this will become a staple recipe in my kitchen, too.
INGREDIENTS: 1 large cucumber, sliced 10 grape/cherry tomatoes sliced (or 2 medium tomatoes) 1⁄2 medium red onion sliced
SYRUP: 1⁄4 cup apple cider vinegar 1⁄2 cup water 1⁄4 cup sugar - I used unrefined coconut sugar 1⁄4 tsp salt 1/8 tsp pepper
Stir syrup mixture till sugar & salt dissolved....pour over veggies and store covered in the refrigerator for at least 2 hours before serving.
I’m so glad I am able to share in this family recipe. Gram’s favorite dish of mine is a toss up between her home made apple sauce and Chicken Divine. I don’t eat meat anymore, but if I ever did - that would be what I’d choose. What is your favorite family recipe?
