Excitement is an understatement for the CSA season. Wait, over. The Bloomsbury Farm half-share CSA will be gracing my home every other week through October. Bloomsbury goes above and beyond the extra mile, making every basket special. I love the beautiful arrangement, it's what made my love for eating clean intensify last year. The winter was long, butternut squash held me over. But, now I can't wait to dig my hands into some fresh spring and early summer veggies!
I threw together a basic salad this week, inspired by the radishes from Bloomsbury Farms. I was just in Colorado celebrating a friend and hosting a baby shower (a long awaited baby is going to grace our lives in September and I can't wait to continue my "aunt" status!) So, coming back into town, and a heavy workload, I needed a simple salad. Just toss the ingredients together with your favorite dressing (I use my faithful staple: olive oil, balsamic vinegar, and a little salt & pep).
INGREDIENTS + mixed greens (Norton Family Farm) + 1 radish, sliced thinly (Bloomsbury Farm) + 1 carrot, diced (Kirkview Farm) + cucumber, halved + raw pine nuts + 1 hard boiled egg, halved and peppered (Bloomsbury Farm)
